Johan hails from the city of Dunkerque in Northern France. With a Hospitality and Restaurant degree in French cooking, his experience extends to working in both traditional and fine dining restaurants. Johan's varied background has seen him work in Italian restaurants in Australia and New Zealand, a Japanese kaiseki restaurant in Kyoto, fine dining izakaya in Hong Kong and at a sushi counter in London. He looks forward to sharing Hokkaido's incredible produce in delightful ways with you during your stay.
